Tea Rose
Pasteurized Goat Milk, Culture, Animal Rennet, Salt, Herbs de Provence, Rose Petals, Fennel Pollen
Capriole Goat Cheese, Indiana
The allure of this fresh, lactic cheese is far more than a pretty face. Fragrant herbs, rose petals, and a touch of fennel pollen subtly compliment the light, delicate paste of Capriole’s fresh, bright chevre to evoke the spirit of Spring.
Alp Blossom
Raw Cow Milk, Salt, Rennet, Cheese Cultures, Edible Flower Petals Including: Marigold, Rose, Lavender, and Cornflower
Hofkäserei Kraus/Allgäu, Germany
Alp Blossom hails from Hofkäserei Kraus, a dairy nestled in the Allgäu region of Germany. The rind is coated in a custom blend of dried lavender, rose, marigold, cornflower, oregano, and chives. The dried flowers and herbs pay homage to the diverse grazing pastures of the Allgäu. Alp Blossom is complex and nuanced: the inner paste is savory and brothy, while the rind carries aromas of mixed florals and sweet hay. The Alpine springtime is captured in each bite.
Pecorino Camomilla
Pasteurized Sheep's Milk, Salt, Animal Rennetr, Cheese Cultures, Chamomile Flowers, Olive Oil
Emilia Romano, Italy
Camomilla is produced in May and June, when the sheep graze on the best grass of the year and the fields are covered with chamomile flowers. Paolo was again inspired by memories of his grandma, who would put the cheese in large wooden crates covered with fresh cut chamomile to preserve it as it aged. The wheels were stored closed up under the arches during the afternoon heat and then placed in a cool pantry in the evening. The process maintained the cheese’s softness, as well the floral aroma. Paolo has spent the last several years dedicated to recreating this one of a kind cheese that has hints of herbal sweetness and fresh cut apples.

Raventos i Blanc de Nit Rosado Brut Rose
Catalonia, Spain
After centuries of grape growing and playing a role in the creation of the Cava DO, the Raventós family chose to leave the appellation in 2012 and champion the ‘future DO’ of Conca del Riu Anoia. Only indigenous varieties are grown and the vineyard is certified biodynamic. Yields were down more than 20% in this drought year but the fruit was very healthy. A little local Monastrell (5%) provides colour and texture, rounded out by 18 months of ageing. Christine Parkinson: Mandarin, vanilla and blood orange. Fresh, vibrant palate: citrus, bitter melon. Acidity provides balance and poise. A lick of tannin supports the creamy texture. Very long. Sarah Jane Evans MW: Subtle, restrained, perfumed. Lightly grippy with a savoury pastry note; lacks the usual sweet fruit. Stylish, gastronomic. Blossoms in the glass. Delicious. Valentin Radosav: Elegant strawberry and red flower aromas. Balanced fruit profile and refreshing acidity.

Catskill Provisions Raw Wildflower Honey
Catskill, NY
Claire Marin, founder of Catskill Provisions in Long Eddy, New York, believes that happy bees make better honey. She started off as a hobbyist beekeeper, and now tends over 300 beehives in Delaware, Sullivan, and Madison counties. Catskill Provisions produces two seasonal honeys - fall and spring - and you can taste what the bees taste -- clover, apple, pear blossom in the spring and chestnut, maple, and asters in the fall. A perfect condiment to pair with a wide variety of cheese! Catskill Provisions honey is raw, meaning that it is not heated for processing, leaving all the inherent goodness of the honey intact. The pollen, propolis, and beeswax found in her raw honey has many health benefits for humans as well as bees! Claire takes care to always leave enough honey inside the hive for the bees to not become stressed, part of her commitment to keeping the bees happy.
Our Cheese of the Month Club started as a means of supporting small, regional artisan producers during the hardship of COVID. It was an enormous success, and we’re proud to have given a little boost to the hard working folk who provide us with nourishment and joy. Each month, we also gave 10% of our Club’s sales to a Charity or Agricultural Organization doing something we thought noble. We’ll be keeping that custom moving forward, but expanding the selection a bit to include cheeses from across the US and around the world. Each month will feature small-batch products made by real humans with genuine love for the products they bring to market. Three cheeses, a curated sweet or savory condiment, and crackers or biscuits are always included, as are descriptions of what you’re about to enjoy. Some months may include an added bonus. A collection of artisanal goods, a hint of whimsy, a sprinkling of feel-good, and a hefty portion of delicious. Also - commitments as short as one month. Whatcha waitin’ for?
