A silky, buttery, bloomy rind sheeps' milk triple creme cheese that can put your favorite brie or camembert to shame. Sheeps' milk is naturally the highest in butterfat, coming in at around 7% (cows and goats are more around the 4-5% range). That means that the paste of this bloomy rind cheese is chock full of fatty goodness, melting on the tongue and leaving you craving another bite! The rind lends a slight mushroomy quality to the cheese, rounding out the sweet cream flavor with a touch of earthyness. You’re gonna want a little honey on the side here. Trust on this one. Comte, once upon a time, was referenced as French Gruyere. When someone French realized the ridiculousness of that claim, the whole community united in branding this nutty Alpine as incomparably exquisite. Although we don’t carry the 36 month version often, we’re thrilled to have it in stock everytime. Comte’s maturation makes for an enormous array of flavors, and this particular wheel encapsulates a intensity and depth of flavor that’s second to none and rich with crystalline texture. Birdy's evolved from a love of both food and ecology. The company founder, Doug Partridge, has been researching or making mustard most of his adult life. While studying for an advanced degree in Ecology at the University of Michigan focused on ecological properties of the mustard plant family, Doug became keenly aware of the culinary importance of this family of plants. He began researching the historical uses and production of mustard. Their mustards are the culmination of over ten years of researching and testing and strive to be a pantry staple for the everyday home cook.
Our Cheese of the Month Club started as a means of supporting small, regional artisan producers during the hardship of COVID. It was an enormous success, and we’re proud to have given a little boost to the hard working folk who provide us with nourishment and joy. Each month, we also gave 10% of our Club’s sales to a Charity or Agricultural Organization doing something we thought noble. We’ll be keeping that custom moving forward, but expanding the selection a bit to include cheeses from across the US and around the world. Each month will feature small-batch products made by real humans with genuine love for the products they bring to market. Three cheeses, a curated sweet or savory condiment, and crackers or biscuits are always included, as are descriptions of what you’re about to enjoy. Some months may include an added bonus. A collection of artisanal goods, a hint of whimsy, a sprinkling of feel-good, and a hefty portion of delicious. Also - commitments as short as one month. Whatcha waitin’ for?
