Alongside every featured cheese, you’ll find thoughtfully chosen accompaniments that highlight its character, from sweet and boozy preserves to crisp crackers and other pantry favorites. Whether you’re discovering Irish cheese for the first time or deepening a long-time love, we hope each box invites you to slow down, share a board, and enjoy a taste of Irelend.

The Second Mouse Cheese of the Month Club is available for pick-up at our Pleasantville shop, or for delivery within Westchester County (at an additional charge). Subscribe for as few or as many months as suits your needs.

Irish Cheddar

Pasteurized Cow Milk, Salt, Starter Cultures, Vegetarian Rennet

Ireland

A moist and crumbly texture boasts buttery grassy notes from Ireland’s rolling pastures. It’s sweet, creamy, and light, its supple straw-colored paste is infused with gentle fruity undertones. Try melting it over vegetables or potatoes or snacking on it with some crunchy pickles, hearty crackers, and of course, an Irish stout.

Gubbeen

Pasteurized Cow Milk, Salt, Cheese Cultures, Animal Rennet

County Cork, Ireland

The word “Gubbeen” translates to: small mouthful. For five generations, the Ferguson family has farmed the same coastal land in County Cork and remains the only producer of Gubbeen. Made with milk from their own herd of cows grazing seaside grasses, the cheese reflects the character of the farm. During aging, the wheels are washed in a brine of salt, water, and white wine, creating the cheese’s signature sticky rind and savory aroma—hallmarks of washed-rind cheeses.

Cashel Blue

Pasteurized Cow Milk, Salt, Cheese Cultures, Enzymes, Penicillium Roqueforti

County Tipperary, Ireland

After being forced out of England more than 300 years ago due to religious differences, the Grubb family settled in County Tipperary, Ireland, where they continued their traditions of milling and buttermaking. Today, they craft Cashel Blue using milk from their herd of 110 Friesian cows. The milk is pasteurized and the cheese is aged for two to six months, developing its balanced blue character. The most flavorful wheels are produced from April through October, when the cows graze on fresh pasture.

These crackers have a quiet, subtle complexity that takes over -a product of the traditional alchemy of buttermilk, butter, and stone ground wheat.

Irish Black Butter

Ireland

Irish Black Butter is a rich, dairy-free, and versatile sweet-and-savory spread made from Armagh Bramley apples, cider, treacle, brandy, and spices. Originating from Northern Ireland, this award-winning, dark, caramelized conserve is often used with cheese boards, as a glaze for meats, or spread on toast and scones.

This delicious butter is made exclusively from summer milk. The combination of fresh Atlantic air, rich fertile soil, and plentiful rain produces lush grass for cows to graze on. You can taste the difference in the superbly rich, creamy milk, which creates a naturally soft, golden butter full of flavor.

Capriole O’Banon

Pasteurized Goat Milk, Culture, Rennet, Salt, Geotrichum Candidum, Bourbon-Marinated Chesnut Leaves

Capriole Farms, Indiana

Inspired by the French cheese Banon, Capriole’s O’Banon is a fresh chèvre wrapped in bourbon-soaked chestnut leaves. Cheesemaker Judy Schad created it after noticing a chestnut tree in her backyard and putting her own Kentucky twist on the classic. The curds are carefully hand-ladled to preserve an exceptionally soft, cloud-like texture. Bright and tangy at first, the cheese finishes with a gentle, mellow sweetness.

Wave Hill Irish Soda Bread

What makes Wave Hill Breads' Irish Soda Bread so special? They soak the raisins in Jameson’s Irish Whiskey, not just for intense flavor infusion but to help retain moisture. The alcohol burns off during baking, leaving behind moisture and flavor. Each loaf is gently hand-mixed so as to not over-mix this "dry dough" that's anything but dry. North Country Irish Bangers

North Country Irish Bangers are traditional Irish-style pork sausages made with coarsely ground pork and a classic blend of savory herbs and spices. Juicy and flavorful, they cook up tender with a satisfying snap—perfect alongside mashed potatoes, in a full Irish breakfast, or tucked into a warm roll.

Girl Meets Dirt Ginny Jam

This limited-edition, botanical preserve made in collaboration with Copperworks Distilling using Orcas Island plums soaked in gin, sugar, and lemon juice. This sweet-and-savory spread features notes of mulled wine, flowers, and candied fruit.



Our Cheese of the Month Club started as a means of supporting small, regional artisan producers during the hardship of COVID. It was an enormous success, and we’re proud to have given a little boost to the hard working folk who provide us with nourishment and joy. Each month, we also gave 10% of our Club’s sales to a Charity or Agricultural Organization doing something we thought noble. We’ll be keeping that custom moving forward, but expanding the selection a bit to include cheeses from across the US and around the world. Each month will feature small-batch products made by real humans with genuine love for the products they bring to market. Three cheeses, a curated sweet or savory condiment, and crackers or biscuits are always included, as are descriptions of what you’re about to enjoy. Some months may include an added bonus. A collection of artisanal goods, a hint of whimsy, a sprinkling of feel-good, and a hefty portion of delicious. Also - commitments as short as one month. Whatcha waitin’ for?
